Big E is Back!

Eric Austin, the talented chef behind the late, lamented Big E's Soulfood on Eat Street, has resurfaced in South Saint Paul with a new upscale restaurant, the Bourbon Street Steakhouse, in the dining space formerly occupied by TreVina Italian Steak House. It's a more suitable venue for fine dining than the little storefront on Eat Street, and Austin is now able to offer cocktails and a wine and beer selection to go with his cuisine.

chef Eric AustinAustin, who trained at Commander's Palace in New Orleans, offers a nice selection of Creole specialties, many of them upscale presentations of the classic Creole fare that he served at Big E's. But the menu has a wider range, from beer can chicken with whisky baked beans ($16) to lamb chops with rosemary and parmesan cornbread stuffing, and a 20 ounce ribeye cowboy steak served with baked beans, chorizo and sauteed asparagus ($32). (The south Saint Paul stockyards are right across the street.)

I was very impressed with the Louisiana gumbo, made with a proper brown butter and flour roux, and brimming with shrimp, crawfish, andouille sausage and chicken, and the entrée of shrimp and crawfish etouffee, smothered in a rich brown gravy. The blackened catfish, a nightly special, was also first-rate - moist and flaky and accompanied by a roasted sweet corn succotash. My smothered pork chop wasn't quite as exciting as the Creole dishes, but it was enormous and quite tasty.

With a day's notice, Austin also offers a special Chef's Table menu, made up to order, for $65 per person, including two glasses of wine per person. Austin says he asks diners three questions - whether they have any food allergies, whether there are any foods they absolutely won't eat, and whether they prefer land, sea or air - and then he invents a menu.

We came as a whole group to welcome Big E to Saint Paul and after begging for YEARS for him to come to Saint Paul from his other Mpls restaraunts. I got to be excited for just a couple weeks that I had my new "place" before they decided that they didn't need Chef E to continue. WHAT???!!! I am so upset and outraged!!! Of course you need him! Whoever got cocky and decided to toss the pilot out of his plane should be ashamed and embarrassed. That was the stupidest thing I ever heard of! I know you will be back Chef, and we will be waiting for you...

Dear Jeremy, I'm glad that you found chef E's food to be delicious. Those of us who have been eating it for years already knew that it was. The guy is a soul food genius. By the way, my dad loves the pork chop.

I am addicted to your food, Chef! I was a regular guest at your restaraunts and then a coworker had you over to his home to cater a business function. I hope I run into you privately again, but in the meantime I will be watching for you to come back on the scene. I'm sure you will find a way to let everyone know where you are. Thanks

I'm sorry Jeremy, but I just read your take on Favor. Big E has definitely raised the bar on soul food in this town. My group and I were there and you were right, there was no alcohol although the bar was right there. But that's not the point. Where Eric has flair and taste, the food here looked as if the chef didn't care to have pride in their work (do we even know who the chef is there? you didn't mention him or her) But EVERYONE knows when Big E is at the helm. There's just something about the guy that takes you back. He is a real authentic Southerner. My kids and my grandmother swears that his food is the real deal. I'm not that bad a cook, but Favor taste to me like I put it together for some friends watching the game in my basement. Nothing wrong with it, but when I go out to eat at Big E's restaurant, I know that it's restaurant food, and yet at the same time, good home cooking if that makes sense. My grandmother has probably been cooking years before Big E was born and she gets very excited like she's going back to the South and the way it "ought" to be done. We need Big E back in this town. Sorry for the length of this comment, just felt you should know.

It restored my faith in St. Paul to finally have a place where everything on the restaurant menu was phenominal. Sure we have places like W.A Frost and Forepaughs with high end cuisine. But the real money seems to be on establishments in Minneapolis. For once we had some soul and a chef that brought back old fashioned restaurant values - greet the customer, make everything's spectacular and provide excellent personable service ( I was there three times and by the third visit the server knew my name) and now it's gone. I guess it's back to Mpls for chef E, please don't think poorly of us St. Paulians, we're trying to grow as a restaurant destination. It's just as well chef E, Bourbon Street was off the beaten path anyway - couldn't you consider a place on Grand or Selby next time - we could sure use it.

This is tragic! Big E has been 86'd. I think he was about to give JD at the Strip Club a run for his money. That would have been an interesting food rivalry that I would have loved to referee. Going back and forth between the both of them for steak comparisons. That would have been a tasty fight. Anyone care to guess who would have won? Probably the wrong site to ask this - let me guess, you all are going to pick JD (LOL).

You know... I have been reading all the blogs and comments by Chef E and that lead me to his original website (www.BigEsoul.com) and all the informational videos. They are really great! Then I looked at all the famous people that he has cooked for in the photographs and thought to myself that "this is a really interesting guy - with something to say in the world". He seems to write stories in a unique way. I also have attended functions where he spoke in front of the March of Dimes and others, and found him to be friendly, intellegent and EXTREMELY entertaining and funny. I think Chef E should seriously consider a job as a food writer - as well as Chef, of course. Jeremy, don't you agree? Maybe you two should hook up like - Syskal and Ebert of the food world. It would be nice to get an honest evaluation from a Chef's perspective - and we can all see that Chef E doesn't say anything if he doesn't mean it. I hope you both think about it...

Actually I saw the videos and had a different thought Sara. Maybe E should consider opening a cooking school instead of a restaurant. Those videos are great! I could really follow along and I was amazed at how easy Chef E made it look. He is really talented. In these economic times people can rarely eat out as much as they used to and families don't sit down together at the dinner table like they used to. Young brides aren't cooking for their husbands like they used to. The family is falling apart. Breaking bread together in fellowship is truly what God intended. If you read this Big E, I would be your first student.

I just got off of Chef E's site www.bigesoul.com and I'm telling you you have got to check out those videos. I have been watching some of the new shows that Food Network have been putting out like Cooking for Real and Down home with the Neely's, and there is no reason that E couldn't be on that network. He's got the stuff and I don't even think he's using a script. The guy is a natural born teacher. Food Network if you're reading check this guy out.

I was in Big E's kitchen when all of that stuff went down. Man that was so long ago and frankly I don't see anything wrong with a man trying to protect his business. He gave me an internship and was teaching me how to open my own business too. I learned alot from chef E and am now helping my family run a small soul food restaurant in Chicago. I love what I learned from the man. Thanks E.

That's true, from what I know Big E hadn't been on the scene in nearly a year and everybody was looking for the guy. As soon as he pops up in So. Saint Paul of all places, I'm told that the place looked spectacular inside and that E was just as good as ever he is all of a sudden let go! Well that's business suicide. Is this Richard person for real. Greed.

Big E is not here and through no doing of his own, from what I believe. Mr Defoe asked him to leave (from accounts that I heard and have read) and now must suffer the consequense of such a closed sighted piece of judgement. If this is not true then why have we heard nothing from Mr. Richard Defoe to the contrary, nor have we had anything reported on who this man is? Jeremy Iggers gave the man a chance for rebutle and got nothing but "he's out of the office 'til Friday" (a usual trick of television businessmen not wanting to face the music). Although I don't want to do it, i am curious to know how the place is running, the food tastes and how popular this place has become since E isn't there? Just curious. I'll just look for future reviews I guess, if they'll be any. And that will tell it all. BEWARE ALL OF THOSE SEARCHING FOR E _ HE IS NOT HERE!
